Invited by the Residence Le Chêne, we renew the banquet experience at Christmas time with the residents relatives. This event is the opportunity to elaborate with the kitchen staff new food shapes and textures for the event (and that could eventually be integrated to daily meals afterward) and to work on the meetings conviviality, particularly by specific objects also promoting the cooks know-how.
At the entrance, a scenery is available to take family portrait photographs. Hanging in the banquet room, coat-of-arms are adorned with an H for “Huntington” surrounded by oak leaves. A singing log introduces plates advent. Food is served on five different trays. Progressively stacked, the complete object is only visible at the end of the meal. A large tray brought by the kitchen staff holds the final piece: a two meters log to share with the guests.
